Big Fish

My neighbor went fishing and gave me a yellowtail (ぶり). It’s also known as amberjack.

I’ve never prepared a fish by myself before

If someone gave you a whole fish, what would you do?

What fish dishes do you recommend I make with a yellowtail?



 

step 1: remove the scales


scale = a small, hard piece of skin (e.g. on a snake or dragon)



If you don’t have a special tool, you can use a metal sponge


step 2: remove the guts (and other organs).

guts = intestines (ちょう) = long tube connected to stomach

The first cut along the belly shouldn’t be too deep to avoid cutting into the organs

 

step 3: cut along the spine to remove a piece of the fish on one side. Cut out any large bones you find

step 4: repeat on the other side

What should I do with the head?

 

 

I made Sashimi, Burizuke, Thai fish head soup

I’ll also try a Brazilian fish stew with the fish I froze.

Yellowtail often has worms inside.
What should I do if I find worms?

Most websites say you should just try to pull them out.
Cooking or freezing the fish will kill the worms.
If you make sashimi, you should remove them
